We have been asked to find a speciality Mediterranean Chef sought for this quality Boutique Resort in The Maldives seeking experienced, innovative Chef de Cuisine for this luxury resort.
The Restaurant Chef de Cuisine is also responsible for the daily and seasons menus, staff management, training and production planning. Candidate will possess a luxury 5 star hotel backgrounds and a minimum of 3 years experience as a Chef de Cuisine.
We are seeking a Catalan specialist with an excellent knowledge of Spanish - Mediterranean Cuisine and the chef can be American or European Trained Mediterranean Chef , with knowledge of Spanish, French, Italian, Greek, Turkish and north African influences - responsible for the day-to-day operation of the kitchen and ensures that all quality, cost and safety standards are met or exceeded. The position requires an individual who is creative, familiar with current culinary trends/methods, has been classically trained and has experience in Catalan Cuisine.
This role is for one Quality Restaurant, mastering 80 guests per evening , to lead and train a small team and ensure the highest standards of presentation, quality of food, health and safety and hygiene are maintained at all times
This Speciality Mediterranean Chef will report into the Executive Chef oversee and direct aspects of Kitchen development to ensure delivers world class cuisine whilst overseeing and direct all aspects of the kitchen operations. Achieving an excellent standard of food quality and food presentation as well as managing the food costs in accordance with resort guidelines with regards to both quality and style of cuisine and will be able to manage all aspects of the kitchen including purchasing, staffing, menu design and presentation.
The ideal candidate will have worked in similar luxury Resorts and /or restaurants around the world, particularly in Asia . They would need to be hands on and creative, well-motivated, ambitious and quality driven. The Maldives is a very challenging destination to live and work at this level on a small island so we would need someone who is flexible, positive and enthusiastic at all times. Training and development of the team is paramount as is guest satisfaction and cleanliness and organisation of the kitchen itself
Criteria
Had previous luxury resort and/or restaurant leadership kitchen experience
Plan and create innovative menus to provide with an unsurpassable dinning experience.
Skilled in communication and relationship building
Able to work in remote areas and achieve world class standards
