Our client in St Lucia offers a modern contemporary resort with just over 100 rooms providing an intimate environment with modern facilities, including the luxury Spa, fitness centre, retail shopping, bars and restaurants for the ultimate holiday experience.

This historic part of St Lucia overlooks a fantastic new marina for visiting luxury sailing and motor yachts and is a very well-known holiday destination set amongst other lively restaurants & bars,

We seek an outstanding Restaurant Chef for the hotels casual but fine dinning modern contemporary destination Restaurant, where the elegant restaurant showcases memorabilia and historical pictures. 

Ultimately we seek a fine dinning, Restaurant Chef with no EGO, who is interested in working in a progressing environment, before developing into a Resort ex sous chef. The Restaurant Chef de Cuisine we seek will be able to assist the Resort Executive Chef from time to time and be a serious manager of people.

The Restaurant is open for breakfast, lunch and dinner, and has a relaxed, casual setting overlooking the bay with a more formal colonial setting in the evenings where the menu concept is one of Ala Carte choices of 8 – 10 appetisers, main courses, and selection of specials.

Ideally, you will already have Caribbean or Resort Restaurant experience and have an inspirational nature, able to adapt a menu in an open minded way to in fuse local tastes to modern International cuisine, using the best local ingredident, such as local fish, local herbs and spices and local vegetable and present them in refined ways, showing creative influences.

The hotel has a capacity of over 250 and the restaurant has a capacity of 80/100 covers but averages over fifty covers a day.

Open 7 days a week, breakfast, Lunch and Dinner, the role of the Chef de Cuisine will be to oversee all restaurant culinary and managerial standarsds and focus on Restaurant Dinners, however, we seek a chef who can be helpful in guiding and mentoring the Lunch brigade and see the expatriate role as someone who will develop the skill of the local chefs whilst complimenting local ingredients.

It would suit someone with some Caribbean experience but not essential

We have been asked to find a great Executive Chef to oversee and direct all aspects of Kitchen management to ensure this resort delivers world class internatinoal cuisine and maintains only the highest standards of service, food control, training, quality and food presentation as well as managing the food costs in accordance with resort guidelines.

The chef will manage all aspects of kitchen management including purchasing, staffing, menu design and presentation.

• Previous 5 star luxury resort experience
• Able to plan and create innovative menus to provide an unsurpassable dinning experience.
• Highly effective skills in communication and relationship building
• Able to work in remote areas and achieve world class standards
• The ability to track competitor trends and conduct Food product analysis
• With energy, drive and determination
• Talented and focussed professional who can make an impact, exceptionally managing multi nationalities of team members
