To commence April 2007 reporting to Director of Food & Beverage
Our client is an International Hotel operator with a 200+ bedroom Resort and Spa with over ten restaurants & Bar on this Islands paradise in Thailand, Offering its guests to experience the world class standards of contemporary cuisine.
The client is a very well respected hospitality group looking for an Executive Chef to head up the kitchens in their Flagship property in Thailand . The role will require the applicant to work, train, motivate and develop a largely local brigade whilst maintaining if not raising the standards.
The successful applicant will have a International quality background in luxurious properties such as Hyatt, Four Seasons, Ritz Carlton, Shangri-La, and Mandarin Oriental resorts and will be fully aware of the requirements of an international clientele.
The successful candidate will be able to demonstrate the following qualities:
A creative and passionate culinary leader.
Asian experience is preferable, but not essential.
A focused person that understands and is able to communicate al all levels;
A dynamic individual able to meet the challenges of an award winning world class property
Has previous remote location experience, and understands the lifestyle this entails corporate environment.
Management experience of large properties.
Has been involved in a pre-opening or renovation team.
Highly organized
Strong HACCP & Health & Safety background within a well structured organisation.
The candidate will also be required to be fully involved in the renovation and re-launch of two of the Food and beverage outlets, within the coming year, bringing ideas of concepts and themes to their senior management team as well as advising on operational issues for each outlet. Your will also be required to possess the following skills and knowledge:
Excellent culinary skills; possesses the ability to perform all functions in the culinary operation;
Extensive knowledge of food handling and sanitation standards;
Experience in high volume operation and menu composition;
Experience with purchasing and maintaining kitchen equipment;
Understanding of Restaurant, Bar/Lounge, Room Service and Catering operational procedures;
Effective decision making skills;
Strong problem-solving skills;
Strong consensus building skills;
Strong analytical skills;
Financial management skills e.g., ability to analyze P&L statements, develop operating budgets, forecasting and capital expenditure planning;
Ability to acquire and maintain relationships e.g. associates, customers, vendors;

Knowledge of overall hotel operations as they affect kitchen and related areas;
Good negotiation skills;
Ability to effectively manage labor productivity;
